Quinoa Salad with Spinach, Strawberries and Blueberries

This dish just blew me away!  I had decided to try something new to serve my friend when I had her over to my house for lunch last week.  My friend, Jacqui, just happens to be a professional chef and the owner of a local small business called Tartisan – Sweet & Savory Pastries….so it was risky to try something I had never had before on someone who was a professional cook….but she was a good friend and I knew she wouldn’t care if it didn’t turn out and we would probably figure out how to improve it anyhow.  So, I went for it!!!

No need for improvement for this recipe!!  What a fabulous combination of ingredients!  I am thrilled to share it with you and I hope you enjoy it as much as we all did.

Quinoa Salad with Spinach, Strawberries and Blueberries


1/2 cup olive oil

1/4 cup balsamic vinegar

3 to 4 tablespoons brown sugar

1 1/2 teaspoons garlic powder

1 teaspoon mustard powder

1 teaspoon onion powder

Salt and pepper


1 package (10oz) fresh spinach

2 cups sliced fresh strawberries (cleaned and hulled)

1 cup blueberries

1 cup mandarin orange slices

1 cup sliced peach

1/4 cup sliced green onions

1 cup cooked quinoa

In a medium bowl, combine the dressing ingredients, and whisk together well.  Add salt and pepper to taste.  You can serve the dressing immediately or you can cover it and chill for an hour.

In a large bowl, combine all of the salad ingredients.  Right before serving, add the dressing to the salad and toss.
